I want a more robust theme editor where I can edit the code, and create my own themes, and have much more control over the customization of my themes.

Yes, a very important item! A visual builder that allows for block building with drag & drop functions or template & customize would be great. Some great resources or examples would be (foss) open source free Github projects like GrapeJS (https://github.com/GrapesJS/grapesjs) or another compatible solution (https://github.com/topics/drag-and-drop).
